What I do, and what it costs.

Every horeca project is different. A small café with a light renovation is not the same as a full restaurant buildout with extraction, permits, contractors, kitchen suppliers and an opening team.

So I keep it simple at the start: clear entry points, then a proper scope if we decide to work together.

Readiness Check

A second opinion before a big commitment.

A focused second opinion before a big decision: signing a lease, approving a layout, committing to a contractor quote, or moving forward with a budget that feels a little too optimistic.

You get a clear review of the situation, the main risks, the missing questions, and the next decisions to make.

What you get:

  • Intake call

  • Review of the key documents, plans or budget

  • Focused meeting or site visit, depending on scope

  • Written notes: risks, questions, next steps

Best for: founders who want experienced eyes on one important decision before it becomes expensive.

If we continue into a larger engagement afterwards, this fee counts toward it.

Project Reset

For mid-build projects that need structure fast.

From €2,950 · one-time · excl. btw

For projects that are already moving, but not clearly enough. The timeline slipped. The budget is foggy. Communication with the contractor is tense. Every meeting creates more questions than answers.

I step in, map where the project actually stands, identify the main risks, and create a clearer path forward.

What you get:

  • Project status review

  • Timeline and responsibility map

  • Budget and change-order review

  • Priority list for the next decisions

  • Practical reset plan for owner, contractor, suppliers and advisors

Best for: mid-build projects that need structure fast.

If we continue into full coordination afterwards, this fee counts toward it..

Opening Partner

Full coordination from location to launch.

From €3,500/month · excl. btw

Full owner-side coordination from location to launch. For founders and operators who want someone experienced on their side throughout: coordinating the site, the professionals, the permits, the budget, the suppliers, the layout decisions and the launch preparation.

Most openings need 4-8 months of support. The fee depends on project size, duration and responsibility — some projects work best as a monthly retainer, others as a fixed project fee. We agree the shape before we start.

My fee is never a percentage of what you spend. I have no interest in your project costing more.

Typical scope:

  • Concept-to-brief support

  • Professional and supplier coordination

  • Timeline and decision planning

  • Budget tracking and change control

  • Operational layout review

  • Preparation for handover, soft opening and launch

Best for: serious openings where the cost of delay, confusion or wrong decisions is higher than the cost of getting organized early.

WHAT I DON'T DO

I don't design interiors, draw plans, do construction, process permits myself, or sell equipment. Amsterdam has good people for all of that — part of my job is helping you find and work well with them.

I will always tell you honestly if I think you don't need me, or need less help than you thought.
